French Onion Crack!

I'm waiting in line for my lunch yesterday when a friend of mine and another employee are talking about this French Onion Chicken dish that has been circling Facebook recently. I think "well I like French Onion Soup. I like chicken! my mouth was literally watering as I was thinking this." I speak up to ask for the post to be shared with me.

Now meanwhile, I had planned on having brinner last night of Bacon and Eggs. Chuck was really looking forward to it. And the kids always get French Toast, so they were on board too. But I couldn't get this French Onion Chicken out of my mind.

I looked at this blog post and the picture of this dish all day. My mouth watering the whole time; like it is right now as I am typing up this post.

Just look at that! If you love French Onion Soup as much as I do I don't know how you could not want to eat this!

So I've read through quite a bit of the Creme de la Crumb blog and I think I'm going to love this blog!

Here's Creme de la Crumb's post for this wonderfully looking dish. My friend's co-worker said "this is going to a a regular" and let me tell you that woman is NOT wrong! I will definitely be making this many many many MANY times.

I also made a garlicy, cheesy, mashed cauliflower dish. The main recipe for this came from the I breathe I'm Hungry blog. Another great blog with tons of recipes. I actually can't wait to try the desserts but I'm not their yet. No dessert for this gal until I lose quite a bit of weight.

Now, on to how I make this meal for Chuck and I. First, I himmed and hauled about making this dinner because Chuck really wanted Bacon and Eggs. Both are extremely low carb so either would fit into my dinner plans and still keep me on track. I even had Chuck stop at ShopRite to get all the cheeses I needed. I'm so glad he said "Make the dam chicken!" I love when he's trying to be forceful and he's got this silly little grin on his face. This man makes me laugh so much!

OK, back to what I did.....I'm not going to rewrite either recipe but I will tell you what I did differently.

French Onion Chicken changes

  • 2 chicken breasts sliced in half horizontally to make four pieces. 
  • No flour, use 1/2 tsp xanthum gum instead.
  • Mozzarella instead of Swiss.
  • Italian blend shredded cheese instead of shredded Parmesan; Chuck couldn't find the Parmesan.
  • I put one slice of the provolone, then Mozzarella, then the Italian blend on two pieces. 
  • Chuck used Hot Pepper Cheese on one of his and Horseradish cheese on the other. 
Cheesy Cauliflower Puree changes


  • Hanover's garlic riced cauliflower. You can find this in the frozen veggie section of the grocery store. It is a steamable bag and perfect for us folks that love the rice cauliflower but not the mess of doing it ourselves. 
  • 2 tbsp of butter (salted). 
  • 2 slices of white sharp cheddar cheese (deli style). 
  • Followed the directions on the Hanover's package. Mixed in 1 tbsp butter and the heavy cream. Cooked for 3 more minutes in microwave. Added 1 tbsp butter and the cheese; pureed in Ninja. 
My plate doesn't look nearly as wonderful as Creme de la Crumb's does but O. M. G. was that the best dinner I have had in a really long time. I only ate half my meal as I was completely full but I can't wait to eat the leftovers for lunch today!



So this is a fairly low carb meal. Some would say there's no carbs in it but I disagree. Just the onions alone have carbs. Here's the breakdown based on the two recipes being entered into MyFitnessPal. 10 Net carbs for a meal, especially dinner! I'll take it!


And since I was on victories yesterday, well this was the last and ultimate victory of the day!
