Mother's Day Breakfast: A low carb labor of love!

A few days, maybe a week, before Mother's Day this year I came across a low carb recipe for Cinnamon Rolls that had strawberry filling and a cream cheese icing.

You had me at roll, but the strawberry filling and icing had me drooling!

Of course, I immediately shared this recipe to my facebook page and went about my day. I couldn't wait to make this but apparently didn't think it was wise to check to make sure I had all of the ingredients to make it. 

Shaking my head, thinking back, wondering why I decided not to check if I had everything and why I only made sure I had strawberries! HMMMMMM

But, none the less Mother's Day morning arrived and I was determined to make this scrumptious treat!

I think Chuck was curious about the process and if this little ditty of a dish would turn out because before I knew it, I had a kitchen helper. 


I'm so glad Chuck wanted to help because every time I try to make any type of fathead dough and roll it up I have nothing but trouble. He, on the other hand, doesn't seem to have any problems at all. And well, let's face it. Chuck is a far better baker than I am. I'm a good cook and a fair baker, but he's a much better baker. 

Jesse and Zoey were interested when they heard "Cinnamon Rolls" but when they saw the strawberries, they turned their noses up. Guess what? This is breakfast, so man up!

I ran out of Swerve when making the strawberry compote. UHHHHH, Oh well! I use Swerve, but always use less anyway. So I'm thinking this isn't a big deal. 

When lining up these strawberry cinnamon rolls into the pie dish, they just didn't look appetizing. I was like, well...so what if they aren't pretty, at least they'll taste good! I'm hoping they taste good!

I knew they would spread out while they cooked. 

While the cinnamon rolls were cooking I realized that I didn't have heavy cream, mine was a month out of date, and I had already run out of swerve, so it looks like there won't be any icing! RUT RO RORGE!!!!!!!!!!!!!!

I'm not a huge icing fan so I figured "what the hell". I think others in the house were slightly disappointed that there was no icing. With that being said I think these bad boys turned about pretty dam good considering we didn't have all of the ingredients. As a matter of fact I would have preferred no swerve in the strawberries.


So the next time I make these, or something like them....and I'm sure there will be a next time. I will 1 - make sure I have all the ingredients and 2 - cut down on the swerve. If you are are like me Swerve makes you feel funny. It also affects my blood sugar levels. I know many others don't have any issues with it but for me....I'd rather have a less sweet treat and not have the funny feeling.

Mother's Day for the "non energetic" mom

Mother's Day is a bitter sweet day each year but one I truly love to celebrate. Although it has been over 15 years since I celebrated Mother's Day with my own mom, I get to spend this day with my two kiddos, Chuck, and his mother.

Each year, the kids make me gifts at school and they usually make me laugh. Well this year was no exception. Jesse's class had the "Mom's Gazette". Jesse's drawing is priceless and the check list was quite funny to me. Apparently I made the grade for all the items except "energetic". When I asked Jesse why he thought I wasn't energetic he shrugged his shoulders and said "Welllllllll", then winked at me and that was the end of that. I'm guessing he chose not to say what he was originally going to say. Check that off in the "good boy" column!

He also made me a flamingo named "Karen Jr"; Jesse named the flamingo and wrote the name on the back.

Zoey's teacher made silhouettes of the children. Plus I got a soup can with a sunflower in it. Zoey is really hoping the sunflower will grow "really high". I think she forgot that mommy has a black thumb. Or maybe she didn't forget, because she told me "Now, don't kill it!"


Chuck got me a flamingo planter for the garden. He even got a plant for it....since I was working on the garden on Saturday he put my gift in the garden for me as a surprise. I love it!


Mary got me flamingo socks from hallmark! I had to put them on before we went out shopping.


After bed shopping for Mary, we went to Tacos el Tio for dinner! I love their steak fajitas, chicken ranchero....oh who am I kidding. I love everything there!

Zoey thought the adjustable beds were awesome! She also thought that this 
crazy outfit she had on was "perfect shopping attire"!

Jesse said Grandmom today!

Today Chuck, Jesse, and I took Chuck's mom out to lunch to Chili's for Mother's Day. We had a great time. Jesse was drinking milk out of a regular cup and was so proud of himself. He was having a blast with it. Then we went to the mall. After we dropped Chuck and his mom off at the door, Jesse cried!

After parking I said "Let's go get Daddy and Grandmom.". He said "Daddy" and then looked at me. So I said "And Grandmom", then again "Grandmom". So he said "Grandmom"; of course it came out more as "Gamom" but he said it! So the whole way walking into the mall he said "Gamom, Gamom". And then wouldn't say it again.

Jesse ended up having two time outs in the mall. What fun that was!

Then we all went to Wal-Mart. Again Jesse cried when his Gamom got out of the van at the front door. Once we were inside he was fine. Grandmom bought Jesse some hotwheels, which he absolutely loves!Here he is sitting on the Chez (sp?) lounge playing with his hotwheels with no shirt on. He was saying "cars" as Chuck took the picture.
