Some of these recipes will not be made before I go back to work but I'm going to try to get several of the easy ones made.
Here's a list of recipes that I want to make before going back to work on January 5th; all of these items can be frozen and put into serving size storage bags so I can eat quickly:
- Italian Meatballs - about 200 meatballs
- Spaghetti Sauce - my own recipe
- Breakfast Bites - I'm going to use Italian chicken sausage instead of ham.
- Mama Mandola's Spicy Chicken Soup - I'm going to follow the reviews to make this a bit better.
- Chicken, Tomato & Zucchini Gratin
- Taco Salad Super Bites
- Chicken Cacciatore
- Pasta-less Manicotti - I might have to make a small batch of this before making extra to freeze.
- White "as a ghost" Chili - I love White Chicken Chili and think that I can alter this recipe to my liking to make this the perfect chili for me.
- French Onion Bites - OMG, I might just be in heaven. I LOVE LOVE LOVE French Onion Soup. I can not wait to try these!
- Pepperoni Pizza Mini Meatloafs - these sound absolutely delicious. However I think they may go over on the calorie count for me so I will probably have to adjust them.
- Beef Fiesta Bites
- Tzatziki Sauce and Roasted Eggplant Spread
- Mexican Chicken Salad
- Honey Mustard Chicken Salad
- Zucchini and Chicken Bake
- Chicken Waldorf Salad
- Spicy Crawfish Etouffe
- Spicy Chicken Fried Cauliflower - now this is over my normal 250 calories meal but well worth it. It is a lot of food for one serving so feel free to reduce it.
- Zucchini Pizza w/ Chicken Sausage
- Spicy Ginger Chicken - this is spicy, definitely for me, so if you want to add more chicken use the same ingredients or dabble before adding more ginger!
- Shrimp Jambalya - I'm not a huge seafood fan but my hubby is. I think I will make this again but use crawfish instead of shrimp and add some chicken or chicken sausage or both!
- Naked Asian Chicken Salad - this sounds delicious and I can't wait to make it!
I'm sure there will be more recipes to come to this list as I work on my menu for the next month. :)
