This Spicy Shrimp Stir Fry is right up my husband's alley! He just loves it so every Saturday we pick up 3/4 lb of easy peel shrimp to have this dish. This recipe makes one serving and can be modified to make more. I measure out 3.5 oz of shrimp for myself and my husband gets the rest. I double all the spices below for his batch. I've also made this recipe using 3.5 ounces of chicken breasts (no bone, skin, or fat).
Ingredients
3.5 Oz Shrimp (106)
2 tsp Soy Sauce (6)
1 tsp Apple Cider Vinegar (1)
1/2 Packet Stevia (0)
1/4 tsp Ginger Powder (2)
1/4 tsp dried onion (1)
1/4 tsp red chili flakes (1)
1 tsp diced jalepeno (1)
Instructions - Shrimp
Peel and devein all the shrimp.
Mix all ingredients together, pour over the shrimp and marinate for 1 hour (marinating is not necessary; I'm usually doing this all right before I start cooking). Cook until shrimp are done; make sure they are white/pink instead of gray.

I like to serve this (shrimp or chicken) over a bed of romaine lettuce or baby spinach. Feel free to add some nuts (I usually do cashews) and your favorite dressing (if you want to make it a salad). Walden Farms has a ton of wonderful calorie free dressings!
