My hubby is actually doing a low calorie lifestyle so are two eating plans are clashing at the moment. With that said he's lost tons of weight, about 65 lbs, and just did some extra exercise after having this meal.
The Jalapeno Cheddar Cauliflower muffins were a labor of love. I don't keep a head of cauliflower on hand but always have frozen riced cauliflower. So I used that and I think it changed the recipe some. I ended up pureeing (is that a word) the cauliflower and the jalapenos before mixing everything together. My muffins came out creamy and didn't have a lot of jalapeno flavor. With that being said it most definitely was me. I enjoyed the flavor of these muffins a great deal and will definitely be making them again.
