Beef Fiesta Bites Recipe

More cooking today and this time it was Shelly's Beef Fiesta Bites. These are crustless mini quiches and are oh so yummy. The next time I make them I will mess more with the recipe as I want to add more spices; but here's Shelly's recipe and mine is below.

Ingredients:
  • 1 onion, finely chopped
  • 4 tsps of minced garlic
  • 2 tsps of Brummel & Browns Spread
  • 2 tsps of Hidden Valley Original Ranch (Dressing & Seasoning Mix)
  • 10 large eggs, beaten
Next Time I'm thinking of adding:

  • Garlic Powder
  • Onion Powder
  • Red Pepper Flakes
  • Maybe some Rosemary
Directions:
  • Preheat oven to 350°F. 
  • Brown ground beef set aside. 
  • Saute onion in butter till golden. 
  • Add garlic and saute 1 minute more. 
  • Set aside to cool. 
  • Mix all ingredients together. 
  • Be sure meat & onions have cooled slightly before adding eggs. 
  • Spoon into lightly greased mini muffin tins. 
  • Bake for 30 minutes

Servings: 48
