Chuck, Mary, and myself were busy little beavers in the kitchen yesterday! I lost count on the number of items we cooked to prepare the this week's meals.
Here's a handful of what we made:
* Pancakes for the kids; I've had some pumpkin butter since the fall so I use that to grease the pan. Kids love it!
* Low carb pancakes from www.lowcarbyum.com for Mary and myself; The were absolutely delicious. They puff up like regular pancakes. These were made with Coconut flour. So if you aren't a fan of coconut, I would recommend you use a different flour. I happen to love Coconut. Recipe! I put some sugar free syrup on them as well. I didn't make the pancakes as big as they were supposed to be so it made 5 servings instead of 4. I will try a different recipe next weekend, but this one is definitely a keeper!
* Pasta salad for the hubby; Chuck makes this all the time for himself. His own special recipe.
* Egg salad and tuna salad for me. These are both your basic recipes but are super easy, low carb lunches. It's hard not to have them with crackers, but I'm going to find a way to make low carb crackers.
* Low carb coleslaw for me and Mary She's also making a low carb pulled pork. Another recipe from www.lowcarbyum.com for the Coleslaw. It is a bit bitter so I will cut back on the vinegar next time, but otherwise not too bad! The pulled pork is pretty good. I think I will adjust this recipe next time by adding a few drops of Stevia and using some SF ketchup. I may also use some xanthum gum in order to thicken the sauce. However, I am enjoying it and it's a change in pace for what I normally have. The pulled pork recipe, also from lowcarbyum.com, calls for a half of pita bread to be used to make a sandwich. I did not do this.
* Low carb cream of cauliflower soup, from low-carb-support.com, was absolutely wonderful! I ended up roasting the cauliflower with 1 yellow onion and several garlic cloves. This was done by chopping everything up in medium size pieces, tossing in olive oil, salt, and pepper, then roasting at 425 for 30 minutes. I may add more cheese next time and I'm going to omit the onion I put it in, just use some onion powder. Chuck, Mary, and myself have all enjoyed this soup. I also think I'll make a double batch next time! This way I can freeze some and have it the following week.
* Low carb Sausage, peppers, and onions from www.savortheflavour.com! YEAH BABY! I loved this! I omitted the vinegar, which made the dish absolutely perfect for me. I cannot wait to have this for dinner again tonight! YUMMY!
Now I have to figure out what I'm going to make this coming weekend. I'm looking to try several new recipes so that I have a variety of foods to choose from.
