My own twist on Chicken Waldorf Salad

So I've been dreaming of my mom's chicken salad and potato salad lately.....probably because of the holiday weekend...and well mostly because I miss my mom!

Since I'm living a healthy lifestyle now I wanted to change the chicken salad to be healthier and more inviting to me. Not that mom's chicken salad didn't rock! Because it does (when I make her recipe), did, and always will but I wanted something different.

So today's lunch consisted of:
  • Kids - Chicken salad (chicken breast - boneless, skinless, all fat cut off, little olive oil mayo), cashews, apple slices, yogurt, and milk. 
  • Chuck - made his own spicy version of chicken salad 
  • Me - Chicken Waldorf Salad Karen Style (chicken breast - boneless, skinless, all fat cut off, Walden Farm's Calorie Free Chipotle Mayo, chopped Granny Smith Apple, Chopped Onion, Chopped Cashews, Salt & Pepper to taste). I can't bring myself to put raisins or craisins with chicken salad....just too weird for my tastes.

I had a cup of Ginger Tea and a bottle of water with my meal as well.
