Considering that I don't like cauliflower this is an exceptionally good dish. I have found my substitute for rice! Even my husband loves this dish.
If you want this to be a quick and easy dinner that can be made on a busy week night I recommend grating the cauliflower on the weekend and cutting up the green onions (or any other veggie you want to throw in this dish). You can even cook the chicken in advance and have it shredded or diced ready to go in the frying pan.
The first time I made this I followed the recipe I had found online....on Fat Secret I think!
The second and subsequent times I made this recipe I have changed it to what you see here.
Ingredients
- 1 tbsp Brummel & Brown's Butter (made with yogurt)
- 1 tbsp reduced sodium soy sauce
- 1 large egg
- 1 cup cauliflower, grated
- 1 tsp minced garlic
- 1/4 cup chopped scallions (green onions)
- 1/8 tsp red pepper flakes
- 1/4 tsp ground ginger
- 4 oz Chicken Breast (boneless, skinless, all fat trimmed, raw)
- Saute chicken in water until cooked. I usually flip it when it's half way done and then cut it up into small pieces to ensure it is cooked thoroughly.
- Add Brummels & Brown Butter, Cauliflower, Minced garlic, Chopped scallions, Red pepper flakes, and Ground ginger to frying pan. Cook for 4 minutes on medium or medium/high heat; stirring frequently so it doesn't burn.
- Add cooked chicken and stir.
- Move cauliflower mixture to side of pan and then scramble the egg.
- Once egg is cooked mix cauliflower and egg together.
- Add the soy sauce and mix.
Weight Watchers Points: 7
Feel free to change this recipe as you wish....add anything you want just don't forget to add the calories or weight watchers points (if you are counting these things).
My husband and mother in law have 1 1/2 cups of cauliflower and a regular chicken breast for their portions. I follow the ingredients above for the calorie count and weight watchers points.
You can use the normal portion size of chicken of 3.5 oz; that is 114 calories and 3 WW Points, 4 oz is 140 calories and 4 WW Points.
