Potato Skins Shamato Skins - Who needs them when you have chiken?

I cannot begin to tell you how much my family loved "Texas Chicken Nachos" by RealFoodbyDad.com

Seriously these things reminded me of the Potato Skins you get as an appetizer at any restaurant only ONE MILLION TIMES BETTER!!!!!!!!!!!!!!!!! And what what you say, ZERO CARBS you say!

I call that a winner winner chicken dinner!!!!!!!!

Now, the recipe called for chicken tenders that you pick up in the fresh meat section of the grocery store. I don't like to use these as they have the tendon running right through each one. So I opted to use chicken breast and sliced them up myself. I used three chicken breasts and sliced them about a half an inch thick, maybe 3/4 of an inch. When it came to cooking these the post said 3-4 minutes on each side. It took mine more like 14 minutes on each side. They were juicy and perfect!

If you want this to be a quick meal, I would recommend having the chicken thawed, possibly sliced, and the spice mixture prepared a head of time.

OOOHHH, one more thing we did slightly different! I cooked everything on a cookie sheet instead of transferring it to the cast iron skillet.

Chuck, of course, added fresh jalepenos to his portion, but the kids and I ate it as you see above. Zoey drank 2 cups of milk and said it was spicy. Jesse said "next time, I would like a 3rd one".

All in all this was a huge hit in my house and it is going in the recipe book! I cannot wait to make this again.
